INGREDIENTS
- 1 Cup of your choice of protein - Shredded Chicken, Smoked Salmon or Fried Tofu
- 1/2 cup of your choice of cooked rice
- 1 Carrot
- 1 Zucchini
- 1/2 cup Edamame Beans
- 1/2 Cup Corn
- 1 Avocado
- 1/3 Cup Spring Onions
- 1 Tbsp Ginger
- Olive Oil
- Lemon Juice
- Salt & Pepper
METHOD
- Spiralize carrot and zucchini and blanch in boiling water.
- Lay rice as the base of your bowl
- Add edamame beans, corn, diced avocado, sliced spring onions and ginger
- Add your choice of protein
- Pour over with olive oil, lemon juice and season with salt & pepper
- Finish with sesame seeds
