No-bake Oreo Cheesecake

INGREDIENTS

  • 3 x133g packets of Oreo biscuits
  • 100g melted butter
  • 3tsp gelatine
  • 50mls boiling water
  • 450g cream cheese softened
  • 300mls cream
  • ½ cup caster sugar
  • 300mls cream
  • Mini Oreo biscuits for decoration

METHOD

  1. Grease the base and sides of a 20cm springform cake tin.
  2. Place the Oreos and butter to the 9-cup food processor bowl and process until fine.
  3. Remove the crumbs and press into the base of the cake pan. Set aside.
  4. Sprinkle gelatine into boiling water and whisk well with a fork until gelatine is dissolved. Set aside to cool.
  5. Place the cream cheese, cream, sugar and gelatine in the food processor bowl and process on speed 2 until smooth. Pour mixture into pan and chill in fridge for 4-6 hours or until firm.
  6. When ready to serve remove cheesecake for the pan and place on serving plate. Using the whip accessory, whip the cream in food processor and smooth over the top of the cheese cake, decorate with mini-Oreo biscuits.
