Pasta Dough Recipe

Ingredients

4 eggs

3 cups of flour

Pinch of salt

Water (optional)

Method

Pour 3 cups of flour into a mixing bowl add a good pinch of salt and make a well in the centre.

Break the four eggs into the well and with a fork slowly combine the eggs and flour until well blended.

If the dough mixture is too wet add a small amount of flour, if it is too dry add water gradually and mix.

Lightly flour bench and knead dough with the palms of your hands for about 10 minutes until you have a uniform texture and colour. Form a ball with the dough, wrap in a towel and let dough rest for 30 minutes at room temperature.

Cut the dough into thin slices, approximately 6mm thick (0.25”) or segments to roll out to approximately 6mm thick. Re-wrap the remaining dough in a towel so that the dough does not dry out.

Method to process the dough through Stevens Brava Pasta Machines

Set the regulator knob located on the left side of machine (opposite handle) to position number (1). Pull knob outward and turn it so that the two smooth rollers located in the front of the machine are completely open. Pass a dough slice through the smooth rollers. Fold the slice of dough and sprinkle flour between the folds. If dough becomes moist, repeat this process several times lightly flouring the pasta sheet each time.

Set the regulator knob to the next number (2) and pass the dough through. Reduce the thickness of the dough by gradually adjusting the regulator knob decreasing it one number at a time until the dough reaches the desired thickness.

When this process is completed, the next step is cutting the pasta. With a knife, cut dough sheet to desired length and wrap remainder of sheet in towel to prevent it from drying out. Remove crank handle from smoother roller position and insert into opening for desired cutting roller. Next insert pasta dough sheet into the cutting rollers for the type of pasta being prepared. Turn the handle slowly and hold the edge of the pasta so that it falls easily between cutting rollers of machine.

Allow the dough to dry on the Brava Pasta Rack for 30 minutes.

After preparing the pasta, clean your pasta machine with a dry cloth. Never wash the machine with water or in the dishwasher.

To cook fresh pasta

Bring a large saucepan/stockpot or casserole pot of generously salted water to a boil over high heat.

Add in the fresh pasta, and then immediately gently begin to stir so the noodles do not stick together.

Continue to cook until the pasta is al dente. Note – fresh pasta cooks much quicker than dried pasta.

Then strain the fresh pasta and serve immediately.
