Crepe Recipe

Ingredients

1 cup flour

¾ cup / 185ml milk

½ cup / 125ml water

2 eggs

15g butter, melted

1 Tbsp sugar


Method

  1. Place all ingredients in a food processor or blender using an electric blender. Process until smooth. Cover batter and allow to stand for 1 hour.
  2. Pour 2 – 3 tablespoons of batter onto a heated and lightly greased crepe pan. Using the crepe spreader place in the middle of the mixture and turn in a circular motion to spread the batter out evenly. Cook over a high heat for 1 minute or until golden. Turn crepe and cook for a further 30 seconds. Remove from pan and keep warm. Repeat with remaining batter until finished.
  3. Serve crepes flat or fold into quarters with your favourite topping such as maple syrup with a light dust of icing sugar and berries.
