Ingredients
1 cup flour
¾ cup / 185ml milk
½ cup / 125ml water
2 eggs
15g butter, melted
1 Tbsp sugar
Method
- Place all ingredients in a food processor or blender using an electric blender. Process until smooth. Cover batter and allow to stand for 1 hour.
- Pour 2 – 3 tablespoons of batter onto a heated and lightly greased crepe pan. Using the crepe spreader place in the middle of the mixture and turn in a circular motion to spread the batter out evenly. Cook over a high heat for 1 minute or until golden. Turn crepe and cook for a further 30 seconds. Remove from pan and keep warm. Repeat with remaining batter until finished.
- Serve crepes flat or fold into quarters with your favourite topping such as maple syrup with a light dust of icing sugar and berries.
