Pumpkin Soup

Warm up this winter with our delicious pumpkin soup recipe. Perfect for those cold winter nights when you want something easy and nourishing.

Pumpkin Soup Recipe

INGREDIENTS:

  • 1.2kg Pumpkin, chopped in 2cm pieces
  • 3 Strips of Bacon (approximately 100g)
  • 1 Onion, finely diced
  • 2 Garlic Cloves, finely minced
  • 1/2 Tbsp Curry Powder
  • 1 Medium Kumara, chopped in to 2cm pieces
  • 1 Medium Potato, chopped into 2cm pieces
  • 1L Chicken Stock
  • Cream
  • Salt & Pepper to season
  • Parsley to garnish

METHOD:

1. Peel and dice the pumpkin, kumara, and potatoes into 2cm sized cubes and set them aside.

2. Finely dice the onion. Place a 20cm casserole pot on the stove and fry the onions.

3. While the onions are frying, slice your bacon and mince the two garlic cloves. Once onions are softened, add the sliced bacon and minced garlic and mix together. Cook for 5-10 minutes until the bacon is crispy.

3. Add curry powder to the onions, bacon, and garlic and mix until combined and cooked through.

4. Add the cubed pumpkin, kumara and potatoes. Stir to coat with the curry powder mixture. Cook for roughly 2-3 minutes.

5. Add the chicken stock. The stock should just cover the cubed vegetables, top with extra stock or water if it does not cover. Simmer until the pumpkin is cooked through (about 10-15 minutes).

6. Once cooked, take the casserole off the heat and use a stick blender to puree the soup to a nice smooth consistency.

7. Add the casserole back onto a low heat and add a bit of cream to create your desired taste and thickness. Season with salt and pepper to taste.

8. Divide the soup among four bowls and garnish with parsley.
