Lemon Loaf with Lemon Drizzle Icing

This delicious lemon loaf recipe is quick and easy to prepare. The fresh lemon and yoghurt flavours are great for a summer afternoon tea or dessert.

Ingredients

  • 1 egg
  • zest of 1 lemon
  • 3/4 cup caster sugar
  • 1/2 cup vanilla or natural yoghurt
  • 1/4 cup lemon juice
  • 1 cup of high-grade flour
  • 1 1/2 teapsoons of baking powder

  • 3/4 cup icing sugar
  • 5 tablespoons of lemon juice

Method

  1. Preheat the oven to 160 degrees. Grease a loaf tin with butter or spray oil.
  2. In a large bowl, whisk the egg, lemon zest, caster sugar, yoghurt and lemon juice. Mix the wet ingredients until combined.
  3. Add the flour and baking powder to the wet ingredients. Whisk until just combined.
  4. Pour into the greased loaf tin and place in the preheated oven. Bake for 30-40 minutes or until a skewer inserted comes out clean.
  5. Cool in the tin for 15 minutes then tip out onto a wire cooling rack.
  6. When the loaf is cool, make the lemon drizzle icing by combining the lemon juice and icing sugar in a small bowl and drizzle over the loaf.
