This set is all you need to replicate the flavours of Italy in your own oven.

A pizza stone will produce very similar results to cooking pizza in a masonry oven, as the porous nature of the stone draws away moisture from the base to produce crispy results, without drying out the topping. Its special construction also distributes heat evenly across the entire pizza to maintain an even baking temperature. Great to use with homemade pizza dough or to give ready made crusts that pizza parlour crunch. For a fresh dough base, heat the pizza stone in the oven while rolling out the dough and adding the toppings. Place the raw pizza base onto a baking sheet, pizza paddle or a sheet of baking paper. Whatever option you use, ensure it has been dusted generously with flour. The flour will ensure the pizza base doesn't stick, so you can gently slide the prepared pizza onto the warmed stone. It is very important to also generously dust the warmed stone with flour. You can also prepare your pizza directly on the heated pizza stone. Simply remove the warm stone from the oven and place it on a heat proof surface. Sprinkle with flour and place the rolled out dough onto the pizza stone then add the toppings. Avoid using a lot of pressure when cutting pizza directly on the stone, as it may permanently damage the surface. Pizza stones require minimal maintenance and they're not going to stay clean for a long time, as much loved stones will become discoloured. Allow the stone to cool, dust or scrape off any toppings, clean as per the care instructions and store for the next use. Pizza stones can also be used for other raw bread dough, such as focaccia, Turkish bread loaves or scones.

Smokey Spanish Meatballs & Spaghetti

Food Stylist - Fiona Hugues - My kids love meatballs most days and now that they’re getting older, they have a hankering for expensive Spanish style ones from fancy restaurants that come out Tapa’s style, two to a plate. I’ve upped the flavour of my original safe kid style dish to suit their new richer international tastes. With a side of good old spaghetti pasta at the end of a big day, I love these rich smoky meatballs a lot too.

Roasted Cauliflower Soup with Crispy Cauli Crumbs

Food Stylist Fiona Hugues - this is another one of my Frenchman’s family recipes that I’ve adapted slightly to suit our antipodean living. I have added extra veggies on the top by the way of crispy cauliflower florets instead of the usual croutons.

Country Chicken Pie

Food Stylist Fiona Hugues - This is my version of a classic French Chicken Pie. Don’t skimp on puff pastry as a good quality flaky one makes all the difference. I use chicken thigh fillets as the leg meat, in my opinion, it has far more flavour and has less tendency to be dry. Make extra filling and freeze it for a fast family meal – just thaw overnight in the fridge.

Apple Tartin with Cinnamon Caramel Ice Cream

Food stylist Fiona Hugues - my Frenchman loves nothing more than a good Apple Tartin. We’ve been married for 20 years and I think I’ve finally managed to make it just like his mother used to. I serve it with cheats caramel cinnamon ice cream which is good to eat on its own too.
