Chocolate Vanilla and Orange Tart

INGREDIENTS
PASTRY INGREDIENTS:
- 200g Flour
- 175g corn-starch
- 2 Tbsp cocoa
- 200g Butter
- 125g Sugar
- 1 tsp QUEEN vanilla essence
- 1 egg
- 1 tsp baking powder
FILLING INGREDIENTS:
- 300ml cream
- 200ml milk
- 8 egg yolks
- 75g sugar
- Zest of one orange
- Juice of one orange
TOPPINGS:
- 2 Oranges
- Mint leaves
- 2 Mandarins
METHOD
Pastry
1. Place all the ingredients except for the egg into a food processor and process for around 1 minute.
2. Pour mixture into a bowl and make a well. Crack the egg into well and mix. Use your hands to knead and compress the dough together
3. Wrap dough in plastic wrap and chill in fridge for 30 minutes zest the orange and pre-heat oven to 180°C
4. Remove the dough from the fridge and knead slightly and then roll out to 4-5mm thickness, press into tart pan taking extra care to push all the air out. lay tin foil on top of tart and pour in raw rice
5. Bake the tart for 15 minutes then remove the rice and continue to bake for another 5 minutes.
6. Peel and slice oranges which will go in the base of the tart
Filling
7. Heat the milk and cream in a pot on medium heat until steaming. Whisk the egg yolks and sugar until combined. Pour the heated cream into the egg mixture while whisking continuously Sieve the mixture and then remove any foam with a spoon. Mix in the orange zest and orange juice
8. Remove the tart from the oven and line base with orange slices. Then pour the filling into the tart and turn down the oven to 150°C. Bake for another 30 minutes
9. Peel and slice the remaining orange, peel the mandarin and pick mint leaves
10. Leave the tart to cool slightly before removing from the pan. Chill as long as possible.
11. Decorate with a line of oranges slices, mint leaves and mandarin pieces
